Created in tandem with executive chefs from Sofitel’s Moroccan properties, the menu will feature the authentic tastes and rare spices of the region including: Briouate (minced beef with oriental spices), Zaalouk (eggplant caviar), and Tfaya (lamb and vegetable couscous).
Cost $48 (plus taxes and gratuity) per person.
Just before this week commenced, I was invited to a press luncheon to sample the menu. What a treat!
Our appetizer consisted of a plate filled with five different of refreshing Moroccan salads accompanied by fresh baked breads. The salads included Taktouka (sweet pepper and tomato) Maasala (sweet tomato and honey) Zaalouk (eggplant caviar) and tomato and cucumber.
The main course — attractively presented in a traditional tagine — was a Couscous Royal d’Agneau, a traditional couscous with lamb, seven vegetables, sweet caramelized onions with raisins (a sort of chutney) and a sweet sauce.
For dessert, we were each served an Orange a la Canelle of orange slices set a top a delicious not-sweet grapefruit
gelée and communal plates of dates with walnuts and mini pastries to nibble with our mint tea.
