SnoozeJust like Tom (Patrick Dempsey) in Made of Honor said while waiting in a long line “This is the best bakery in the world. That’s why it is worth waiting for,” I have found an eatery worth waiting in line for called Snooze — a small chain of four restaurants currently in Colorado. Established in 2006 by hospitality, journeyman turned entrepreneur Jon Schegel, Snooze’s success has lead to the opening of  an additional Colorado-based Snooze eatery this year plus one in California.

Open only for breakfast and lunch (Monday – Friday from 6:30 am – 2:30 pm and Saturday – Sunday from 7:00 am – 2:30 pm), Snooze’s goal is to bring you the best breakfast and lunch experience around.

From the friendly atmosphere to the taste of their handcrafted recipes it is easy to breakfasttacounderstand Snooze’s success. In addition to coffee and juice, Snooze offers customized Mimosa’s ($6.00) (I chose a peach one!), Morning Margaritas ($7.00) and more. I sampled Juan’s Breakfast Tacos, scrambled eggs served in a soft corn tortilla with Jack cheese, ranchero sauce and hash browns, ($7.75), Blueberry Lemon Bar Pancakes ($7.50) and Peaches ‘n Cream French Toast ($8.50). The fruit in the from-scratch pancakes and French  toast provided the right amount of sweetness — so much that no additional syrup was needed. Even better, Snooze encourages customers to make up a new pancake or customize a meal to their liking. I had some of my favorite vegetables — avocado, pico de gallo and lettuce — added into my breakfast tacos.

Whether you are meeting up with a friend or looking for a new experience I recommend Snooze as everything from the service to the fresh coffee (which is freshly roasted and flown in from Guatemala on a weekly basis) makes Snooze an eatery worth trying.
