Bonnie: Looking back on weekend breakfasts, I recall the smiles on my boys’ faces when they saw the hot pancakes that disappeared faster than I could get them off the griddle. Fresh butter, pure maple syrup or fresh fruit—the only toppings served.
Some mornings, when in a whimsical mood, I’d pour three circles of batter—one large, the other two smaller ones touching the large—to make Mickey Mouse; or I’d create three concentric ones, adding raisins to the top circle to make a snowman. Both always produced smiles.
For the lightest, fluffiest, most delicious pancakes I start with Saco Buttermilk Blend. I’ve been using it to make pancakes as long as I’ve had kids.
Saco Dried Buttermilk is my family’s Bisquik—our starting point—although you add much more than eggs and milk. Pancakes from the simple recipe on the package are unmatchable. You just stir together the dry ingredients (1 cup flour, 1/4 cup Saco dried buttermilk, 1 T. sugar, 1 t. baking powder, 1/2 t. baking soda, and 1/4 t. salt), combine with the liquid (a beaten egg, 2 T butter or oil, and 1 cup water), stir just until smooth and pour a small amount onto a hot griddle. This makes about eight to 10 pancakes.
I usually put the 2 tablespoons of butter onto the griddle first to melt it, and once it melts, pour it into the dry ingredients so I’ve both melted the butter and greased the griddle. Convenient, huh?
For those who use a mix and add milk, try replacing 1 cup milk with 1 cup water and mix ¼ cup Saco Buttermilk Blend into your dry ingredients.
I don’t recall when, but it was somewhere at the beginning of my food-writing career that I connected with Saco’s Ray Sanna (son of the man who started their family business). I don’t remember our phone meeting, but I do recall what a gentleman he was, and continues to be when we speak. (A lost art!)
Over the decades we’ve never met. Not at a food show, not at a foodie convention, not anywhere. But Ray always greets me on the phone like an old friend who’s glad to hear from you. And since I discovered his family’s products, my pantry is never without two of them—Saco’s Cultured Buttermilk Blend and their Real Chocolate Chunks. (The latter produces the yummiest brownies. I included their recipe in my 365 Great Cookies & Brownies cookbook.)
Today, I only make those pancakes when either of the boys is home. Each batch brings back a flood of memories from that weekend tradition.
Bryan: Bonnie does only make the pancakes when we’re around now, but long ago it was a weekend tradition. Saco is the most important ingredient you need for simply the best pancakes around. The sight of this beige/red little container still brings me right back to Saturday mornings, waking up for a pile of pancakes. I remember sleeping over my friend Paul’s home and waking to his mother’s pancakes from a mix (a sad moment). Paul’s awakening came later, while sleeping at my home. He experienced the enjoyment of waking to my mother’s buttermilk Saco pancakes… simply the best! Sleepovers inevitably ended up at my house from then on.
Eric: Every person has fond memories of their childhood; a distinct smell, flavor or sight that stands out among the rest. For me, believe it or not, it is Saco Dried Buttermilk. As most children remember Aunt Jemima, or Ronald McDonald, I was a fan of “The unknown chef in the white hat” (Saco’s trademark). I remember running down to the kitchen for the traditional weekend breakfast to stuff as many pancakes as possible into my mouth before my brother would stumble out of bed. This essential ingredient will be in my kitchen cupboard for years to come, and is currently adorning my shelf in The Netherlands, after I requested it in food packages from my mother.

Some years ago I ordered a leaflet of 3 pages(2 sheets typing paper) of recipes using Saco cultured Buttermilk Blend powder. A friend recently asked me for the recipe for the baking mix. I copied — on my copier — my copy of what Saco had sent me. But I wondered if there is a more recent recipe book or booklet, with more recipes? I went to the web site listed on my can of Saco Buttermilk Blend powder, with frustrating results. Only when I entered “Saco cultured Buttermilk Blend” in my browser did I get anything that could be called “results,” but still no offer of a collection of recipes using this product. Please, tell me you still publish such a collection in a leaflet, booklet, recipe book, or other form. I have been a faithful user of Saco powdered buttermilk for years, using it exclusively for making the baking mix, with which I make small batches (2-4), or even single, biscuits. I keep this handy mix in my fridge and have biscuits whenever I want, usually making just one or 2. I have used Saco buttermilk for nearly 30 years and have only one complaint. The biscuit recipe that used to be on the package is gone. I called the company about this and they sent me a recipe booklet, but biscuits were not in the book.
I make the biscuits with butter flavored Crisco and my family loves them, especially when I throw in a bit of cheddar cheese.
I will look for the recipe I am missing on the site listed above, but just want to say that this product is wonderful.

I’ve just recently started using SACO buttermilk and was thrilled to win it in the Bite of the Best contest this month! I never seem to have fresh buttermilk on hand when I need it, so this has been great – shelf-stable and very flavorful, it makes fantastic pancakes, quick breads, etc. I’m anxious to try the cocoa, too (using some of the delicous recipes included in the SACO package).
One thing I have discovered is that after opening, the buttermilk seems to get a little clumpy within a couple of months- don’t know why this is, but i’m guessing it’s the humidity in VA. Anyway, after try to break up the “buttermilk balls” with a fork or whisk, I discovered that a quick run through the sifter works perfectly for getting it back to a fine consistency.

The shelf life of our Cultured Buttermilk Blend depends both on when the container is opened and how well it is kept from any source of moisture. An unopened container or envelope of the Cultured Buttermilk Blend has an indefinite shelf life as long as it is kept free from moisture. Once opened, it should be stored in the refrigerator still away from any moisture.
It can last in the refrigerator for several years. You will always be the best judge by simply looking at the product. If it is still in a powder form, it is good to use. If there are lumps that break up into powder they are fine to use as well. If there are lumps that do not break up when touched, they should be sifted out. If the entire canister has hardened it would be best to dispose of the product.

All I can say is WOW! I received this product today and started baking immediately. I have several recipes that require buttermilk and I rarely have it on hand. Then I either have to make a trip to the store or make something else. This product is amazing! I can use exactly what I need and there is no waste. I usually end up throwing lots of buttermilk away when I have to buy it for a recipe.
I am going to have at least one container of this product on hand at all times. Now, where do I hide it so that my grown daughter can’t ‘borrow’ it?

Sadly, my local major grocery stores (King Soopers and Safeway) here in Denver have taken SACO Buttermilk off the shelves. Three cheers for Amazon! I am stacking up. In a pinch I used the SACO recipe for a recent family breakfast, substituting REAL thick buttermilk that I watered down some, but I truly missed the convenience of my SACO. And I used $$$ of gas looking for it. What are the grocery stores thinking? That, or Bisquick and Village Inn have taken over. Sad.
The recipe for the buttermilk pancakes has smeared on the red ink and I had back surgery and can’t get to the store to recopy it from another cardboard can. Could you please help me? Thank You John Conner
John, Glad to assist. The pancake recipe: Sift 1 c flour, 1/4 c Saco buttermilk blend, 1 T sugar, 1 t baking powder, 1/2 t baking soda and 1 t salt together in a mixing bowl. Add a beaten egg, 1 c water and 2 T vegetable oil (I use melted butter!). Do not over beat.
Then make your pancakes. Hope you’re feeling better!

I may not have received my prize yet. But I have used the buttermilk product for your Quiche Lorraine recipe. My son is a vegetarian and loves this dish. With the buttermilk product and you recipe, the quiche is the best I have made. I am anxious to try the cocoa mix.

Have used Saco Buttermilk Blend for years. Love this product.For salad dressings,I mix with water.let set a few minutes & use the same as fresh buttermilk. Can’t tell the difference.
We plan to vacation in October and I was hoping to make up dry pancake mix to take along to the condo using your Buttermilk Blend . I then noticed it says product needs to be refrigerated after opening. Does this mean the mix wouldn’t hold as a dry product for the week…until used?
Please advise if I can mix it ahead of time or not. Thanks much…look forward to using the product for the first time.

The shelf life of our Cultured Buttermilk Blend is substantially extended by refrigeration of the product after the container has been opened. Many customers have successfully taken the product on camping trips with the precaution of keeping it in a cool, dry area. This is usually acceptable for the short periods of time you are mentioning. Eventually without refrigeration the product will harden, leaving pieces of buttermilk that will not blend.
