In March, she started a monthly column in Family Circle that provides a month’s worth of healthy family weeknight meals called On Regina’s Plate. She resides in New York where she can enjoy a wide range of culinary experiences. We recently interviewed Regina for this column.
Which food product or gadget would you never give up? Great Bread! It’s the staff of my life and no matter how hard I try, it gives me too much pleasure and satisfaction to ever give up.

What do you like to serve when you entertain? Lately we’ve been making hearty soups like French Onion or Mushroom Sausage and Farro with homemade bread.

Describe your “last meal?”  Nothing fancy just perfectly made eggplant parmigiana with semolina bread, a great salad and a red wine from Southern Italy.

What food is your secret guilty pleasure? Trail Mix and Granola. I could eat vats of it if left unattended.

What is your go-to neighborhood restaurant? A place called Valencia in Lynbrook where I live. When I was growing up it was ravioli shop that my dad would shop at and they have the old sign hanging up inside. It’s unpretentious, good food, the prices are great and I have never had a bad meal there.

What is one food product most people don’t know about, but should? Lucini fig balsamic vinegar. It’s so delicious I can bathe in it! I basically mix a half cup of it with a half cup of olive oil, 1 teaspoon of Dijon mustard and a sprinkle of salt for the best dressing ever. I also love their cherry and apple balsamic.
