Global Flavors: A Conversation with Top Chefs

Earlier this week — during the Sneak Peek week for New Haven's International Festival of Arts & Ideas — I moderated a conversation with some of New Haven's local heroes -- four of the cities top chefs. The chefs candidly discussed how they came to the Elm City, what life events influenced their cooking style, the global influences on their dishes and more. Featured restaurant chefs included Zinc's Denise Appel, Bespoke's Arturo Franco-Camacho, Miya's Bun Lai, and Union League Cafe's Jean Pierre Vuillermet For the next two weeks or so, you can listen to — and watch — the hour conversation by clicking here.

Brand Name Peanut Butter Product Recalls Related to Salmonella

The US Food Safety blog has a list of brand-name product recalls related to possible Salmonella contamination. Click here for that complete list, which will continue to be updated as new recalls are announced. These products include — but are not limited to — cookies, pastry, sandwich crackers, candy, ice cream or any product containing peanut butter or peanut paste (a blend made from ground roasted peanuts). Supermarket jars of peanut butter have not been found to be contaminated.

FDA Urges Caution Over Eating Peanut Butter-Containing Foods

To be prudent, avoid eating commercially prepared cakes, cookies, crackers, candies, cereal and ice cream that contain peanut butter, peanut paste or ground peanuts. While these snack products are potentially contaminated, supermarket peanut butter is not. Meaning it is still considered safe to serve your kids a PB&J sandwich. The Food and Drug Administration urges consumers to "postpone" eating peanut butter-containing products and institutionally-served peanut butter until further information becomes available about which products may be affected with the strain of salmonella typhimurium which has sickened 474 people nationwide and is implicated in six deaths. Kellogg Recalls Products — Salmonella Concern

Kellogg voluntarily recalled 16 products that contain peanut butter that could be connected to the recent salmonella outbreak. Those products include Keebler cheese and peanut butter sandwich crackers and Keebler and Famous Amos peanut butter cookies. The government is expanding their investigation into other peanut products possibly contaminated with salmonella.  The toll from the recent salmonella outbreak has climbed to 452 people sickened in 43 states, with six possible deaths. Peanut Butter Recall: Suspected in Salmonella Outbreak

King Nut Cos., an Ohio-based company has voluntarily recalled two brands — King Nut  and Parnell's Pride — of peanut butter after salmonella was found in an open five-pound tub sold under the King Nut label. These brands are not sold in retail stores. Instead, they are distributed to food service institutions (hospitals, schools, restaurants and nursing homes). Library Plaque at University of New Haven

I've been collecting cookbooks since I was a teenager. I didn't cook from them as much as read them to learn about food and principles of cooking. I read cookbooks, like others read novels. When  my collection increased to over 12,000 volumes, I started donating books to a local university's hospitality and dietetic departments. Earlier this month, the University of New Haven honored me with a reception as they posted a plaque by the library that I donated.  For the occasion, the student prepared a sumptious and impressive presentation of foods and libation.

Craft Restaurant Atlanta – Tom Colicchio

Recently, I was lucky enough to get to attend a media event for the opening of Tom Colicchio's (of restaurant empire and 'Top Chef' fame) newest restaurant, Craft Atlanta. Craft is the latest dining experience to be added to the Rosewood's most recent property, The Mansion on Peachtree. Though the Mansion currently offers an amazing fine-dining, Italian restaruant, NEO (full report to come!)... Craft adds an alternative, casual, upscale element while also delivering with its renowned, excellent food. Chef Colicchio hosted the casual event, ducking questions about current Top Chef developments and entertaining the lunch crowd with antics from the dishwashing line a few nights before. The Wine Press: The Press

About a week after we crushed our grapes at The Wine Press, we returned for the pressing of them. We needed to extract the juices from our grapes that will ferment to become our wine. Visions of Lucy and Ethyl stomping on the grapes danced in our heads. But alas, instead we just pumped our liquid out of our storage container into the press. The machine pressed it until all the juices were out and then pumped it into our very own oak barrel. (We opted to age our wine for an extra year; that added an extra $100 for the extra year's rental of the barrel.) We will return [...]

Happiness is finally having a business card scanner that works with a Mac! For years I'd return from food conferences with a stack of business cards that needed to be typed — one by one — into my data base, while my friends sang praises of their machine that scanned in the data. Nestlé Recalls Frozen Lean Cuisine Chicken Meals

Nestlé  is recalling approximately 879,565 pounds of frozen chicken meals that may contain foreign materials, the U.S. Department of Agriculture’s Food Safety and Inspection Service announced earlier this week. I spoke to Roz O'Hearn, Nestlé Prepared Foods Company Marketing Communications Manager, once I learned of this who told me, "We initiated this recall after seven reports from consumers. Our experts have determined that the plastic entered our facility in a single lot of an incoming ingredient, used as an accent to these recipes." The following products are subject to recall: 9.5-ounce packages of "LEAN CUISINE PESTO CHICKEN WITH BOW TIE PASTA" brand frozen meals. Printed on each side of each [...]

Viennetta is Back, Sort of

Years ago a reporter asked me to name some supermarket foods I wouldn't be embarrassed to serve to company. Breyers Viennetta was one of my answers. Each flavor contained attractively layered folds of ice cream and crisp dark chocolate. It was elegant, convenient and tasty. This week, a publicist approached me with the exciting news that Unilever is bringing Viennetta back for the holidays. Georges Duboeuf Beaujolais Nouveau Arrives

French law says that Beaujolais Nouveau may be released at 12:01 am on the third Thursday in November. Hence today! This year's wine, which was a late harvest,  is more full-bodied than previous years. Swirl it in a glass to get the aromatic notes of red currants, raspberries and strawberries. Hidden Rose Apples

"I have a produce surprise coming your way," emailed Robert Schueller, marketing director for Melissa's produce company. "Let's just say you'll be one of a few in the world to try it this season." Lucky me! Two days later, Fed Ex dropped off a tiny box with three small seemingly traditional apples... that is until I cut one open. The inside flesh is red. Whole Animal Cuisine – Are You Gonna Eat That Tongue?

I've been hearing more and more buzz about the concept of 'the whole cow' as an ever growing number of young chefs attempt to revive the craft of butchery.
