Butchery Classes at Fleishers in Kingston, New York

Fleisher’s Grass-fed & Organic Meats in Kingston, NY is holding five-day introductory butchery class this August. Students, limited to eight per class, will make sausage, cure charcuterie, carve carcasses (pig, chicken, lamb), witness a chicken slaughter, tour a slaughterhouse and learn about sourcing and sustainability, among many other activities. This class will provide  students with both hands-on butchery experience, lectures and demo segments from Fleisher’s head butcher Joshua Applestone and former Culinary Institute of America instructor Hans Sebald. It's funny how we think of the stuff we eat. The way we classify many foods in the U.S. is by its supposed ethnic background, it's even ingrained in the way we dine. Think about it, what are you in the mood for? French, Italian, Greek, Indian... we see a dish, we catalog its ingredients, and we assign a country of origin to it. What is funniest about this to me is that the foods we often associate with foreign countries are really more about America than anywhere else. Pillsbury $1,000,000 Winner

Sue Compton's recipe for Mini Ice Cream Cookie Cups won $1,000,000 in the Pillsbury Bake-Off last month. Sue's son — who jumped up and down and screamed, "That's my mom!" — happened to be standing right next to me when her category winning was announced. Only the four category winners were announced at the Bake-Off in Orlando; the grand prize of a million dollars wasn't announced until two days later on Oprah in Chicago. Official Tales of the Cocktail Festival Cocktail

And the winner is: Death in the South Pacific by Washington bartender Evan Martin. It's now the “official cocktail” of the 2010 annual culinary and cocktail festival, Tales of the Cocktail.
