I’ve yet to “spiralize” a meal. I do like the obvious idea of veggie pasta, also maybe bulking a pasta w/ spiralized veggies too.

Greek Cucumber Noodle Salad
Make cucumber “noodles” and top with cherry tomatoes, kalamata olives, feta cheese, red onion, chick peas and pickled baby beets. Top with either greek salad dressing (see below) or hummus. It’s basically a Greek salad but in noodle form.
Greek Salad Dressing:
1 clove of Garlic minced
1 teaspoon Oregano
1 teaspoon Rosemary
1/2 teaspoon Kosher Salt
1/8 teaspoon Black Pepper
1/4 cup Lemon Juice, strained if fresh
1/2 cup Extra Virgin Olive Oil
2 teaspoons red wine vinegar
Directions:
Measure and add all ingredients into a glass jar or re-sealable container.
Shake. Serve.
To make Creamy Greek Dressing:
follow above but reduce evoo. And in add mayo and yogurt.
1/4 cup extra-virgin olive oil
1/4 cup mayonnaise and
1/4 cup plain Greek yogurt – full fat
I have never tried spiralizing anything since I do not have a spiralizer! But it looks like a great way to integrate veggies into more meals.

Since I have never tried this new method, I think I would try vegetable “pasta” dishes. I’m even more curious about the spiralized fruit.
Never spiralized. I would go with squash/pumpkin pieces over a nice rotini
I have not done any spiraling, but a zucchini instead of pasta would be a good substitution.
