Members of Les Dames d’Escoffier New York celebrated Legacy Award winner Chef Helen Vass at a dinner earlier this summer at Dame Surbhi Sahni’s Saar Indian Bistro. The winners earn a mentorship opportunity with key members of LDEI, an organization of women leaders in food, fine beverage and hospitality. The Legacy Awards hone the winners’ crafts, stimulate their creativity and encourage these future leaders.

I contacted Dame Surbi Sahni to get the details of what we ate that evening, as we never saw a menu for our multi-course meal. Her special menu started with shakarkandi chaat and murg kesar— smoked sweet potatoes, ginger, green chili and cilantro chutney served with tandoor-cooked chicken marinated in saffron, cardamom and lemon.
Family-style dishes include:
- Begun bharta (smoked eggplant, onions, tomatoes, chilis and roti chips)
- Saffron seabass and black pepper chicken
- Peas upma, mini dosa and coconut chutney
- Pindi chole and amritsari aloo kulcha (pomegranate and cumin flavored chickpeas, potato-stuffed tandoori bread)
- Indian street salad and carrot & cauliflower pickle
- Sarson da saag and makki ki roti (slow-cooked spinach & mustard greens, cornbread)
- Crispy okra salad, dal makhani
- Assorted bread and a cumin lassi shot.
Dinner ended with chai panna cotta – chocolate sauce, tagmo chili chocolate crackle cookies, cashew sweet.
