Most of the rice I’ve tasted of late has been of the instant variety. In our madness to try and get an entire meal together and on the table in 20-minutes, we’ve created faster and faster ways to ‘skin a cat’. I am very much a fan of these products, as long as they remain tasty.. and they pretty much have, at least for Bite of the Best (relatively speaking, I mean, you always make trades when achieving reduced cooking time).
On the flip side of this; I recently had the pleasure of slowing down with a more traditional rice from Fox River. I received a few samples, but immediately gravitated towards the Porcini Arborio variety; “….a creamy, earthy blend of arborio rice and porcini mushrooms from the valleys of Italy….”. The ingredients are simple, arborio rice, porcini mushrooms, organic chicken stock, garlic, onion, salt, parsley, sugar, black pepper & cayenne.
Boil some water and simmer for 20-25 minutes… serve this one with chicken and you’ll overpower your protein. This is rice with flavor to hold up to steak though I ended up pairing with some leftover lamb leg and a glass of Cote du Rhone… simple and fantastic. Give Fox River Rice a try when you’ve got the extra 20-minutes.
