I first indulged in Beecher’s handmade cheese at their shop in the Seattle’s Pike Place Market. Now their cheese is also sold in the Flatiron district of NYC, where you can also grab a meal in the Cellar. I did that recently.

Both our salads were fresh, flavorful and lightly dressed. The beet salad ($13) had diced apples, butternut squash and little balls of herbed goat cheese. Although the menu stated it contained pecans, there were only two! The menu-stated almonds were missing from the kale salad ($14). Nuts aside, it was still yummy and recommendable with with lots of Brussels sprouts, cooked shiitake mushrooms, and shredded flagship reserve.

And how could I not sample what they called the “world’s best” mac & cheese? The dish of crusty, piping hot penne pasta combined with Beecher’s award-winning Flagship cheese. earned it’s title. I highly recommend a visit and each of the dishes I sampled.
